Developed by Ethan Murphy an American Sommelier reisident of Bologna decdiated to Amaro and Edoardo Schiazza, the founder of Amaroteca a center for Amaro apreciaition and President of L'Associazione Nazionale dell'Amaro d'Italia. This comprehensive guide is set to revolutionize the way sommeliers, bartenders, and Amaro aficionados approach the tasting experience.
This guide, created in collaboration with "L'Associazione Nazionale dell'Amaro d'Italia," a non-profit dedicated to promoting the rich culture and diverse producers of Amaro, serves as an essential tool for deepening one's understanding of Amaro and refining tasting skills. Already embraced within Amaroteca and the Amaro Tasting Club, the guided approach promises to elevate the appreciation of Amaro.
The Tasting format:
The first segment of the guide, focusing on the "Aspetto" or appearance. By analyzing clarity, opacity, color, and viscosity, enthusiasts gain valuable insights into the characteristics and potential composition of the Amaro.
Moving on to the next phase, the "Aroma" section of the tasting guide delves into the scents and infusions present in the Amaro. Analyzing the condition, aromatic intensity, alcoholic strength, and dominant aromas, participants categorize a diverse range of scents, including roots, herbs, flowers, spices, fruits, and botanicals.
The subsequent stage explores the "Palato" or palate, where participants finally savor the Amaro. With a focus on analytically separating flavors, alcohol intensity, and the bitterness experienced, tasters verify if the flavors align with the previously identified aromas.
The final part brings together all the data collected during the guided tasting. With newfound insights, participants can determine the optimal serving methods, cocktail pairings, or recommendations for offering Amaro professionally.
This systematic approach to tasting Amaro "Degustazione Guidata" can be utilized for blind tastings among sommeliers, aiding bartenders in creating innovative cocktails, or assisting wine shop owners in curating a selection for their customers.
